Choose raw almonds and almond butter. The benefits can be experienced in their pure form, and hence not when roasted. When almonds are roasted they lose many of the healing properties of the omega oils that they are so rich in. Almonds are rich in:
omega 6’s that lower LDL, the bad cholesterol, and have been shown in a myriad of studies to reduce the risk of heart disease.
vitamin E, a powerful antioxidant needed for many functions of the human body.
copper, which amongst other things, is said to thwart the growth of gray hairs. not sure it’s working in my case.
This whole thing was a religious experience. The food was divine.
Great class on Monday! Already made the tahini dressing in my blender. I have nuts soaking and a machine on hold at Williams Sonoma for pick-up today. Goal is chia pudding by 9:00 pm tonight. So excited!

Thank you for your Vitamix Class! The miso avocado dressing is the bomb. And I’m up to my eyeballs in chia seed pudding. Can’t stop making it – all different ways. Chocolate, mocha, more sweet, less sweet, cinnamon/no cinnamon…. it’s too easy!
I learned so much [in your Meatless Monday class] and I’ve already made the pickles (love them), the sauce with spaghetti squash, the peas and onions, and I’ve already bought myself a rice cooker and use it almost every day. I would love to come to more classes!
Thank you again for a perfect night. The food was wonderful, you were fabulous, the company was great…the first time is an event. The second time is a tradition. This will become one in our house!
