Bok Choy has become a trendy vegetable, which I am only happy about. I like to add it to soups and stir-fries, though I am careful not to over cook it because it I love it with a little crunch. Bok Choy:
- is very high in calcium which is needed for strong bones and good sleep.
- contains compounds called indoles which have been shown to fight cancer.
- very low in calories, 9 calories per cup.
