Artichokes

 

If you haven’t, go to Rome, Italy and eat a Jewish artichoke (carciofo alla judea). [Of course you can find a great recipe (try Joyce Goldstein) but they are a real pain in the a** to make.] They are deep-fried (without any batter) and come out like crispy potato chip flowers. They are delicious but would probably have even a leather-face wake up in the morning with some pimples.

Be not weary. Artichokes do have many healthy properties for us. They:

  • stimulate the production and flow of bile in your liver which aids digestion.
  • are known as a diuretic and help to reduce cholesterol levels.
  • include a decent amount of fiber, typically 6.5 grams per serving.
